It is then a matter of recognizing that the resumption of the economic dimension of cacao culture associated with the incorporation of new technologies and products currently plays an important role in the Southern Coastal Territory - TLS, since the introduction of technologies to the beneficiation process makes it possible to improve cocoa quality, create new processes, add value and consequently open new markets. The methodology used in this study was based on data collection, bibliographic survey, search in patent database and scientific articles. In the search for technological information we used the national database of the National Institute of Industrial Property - INPI and the ORBIT® software. For scientific search we used the online platforms: Web of Science; Scopus (Elsevier) and Scielo.org, for metric and analysis of articles. The study allowed to visualize existing gaps and the possible technological routes related to the processing and derivatives of cocoa; It also showed where there is a higher concentration of patent filings and publications of scientific articles in this area.
